PROBLEM TO BE SOLVED: To provide a method for producing a roux without using a synthetic emulsifier while preventing various problems caused by undissolved material. SOLUTION: A starch material is stirred in hot state together with an oil and fat, a paste material is added thereto, the mixture is stirred in the presence of a natural emulsifier, a powdery material is added to the product and the mixture is stirred in hot state to obtain a molten roux. The molten roux is passed through a strainer furnished with a sieve and solidified by cooling to obtain the objective roux. |
