PURPOSE: Provided are a water soluble plant sterol derivative which can be used in treatment of hypercholesterolemia and prevention of heart-related diseases and hypertension, and method for preparing the same. CONSTITUTION: The water soluble plant sterol derivative, which has an effect for reducing an absorption of cholesterol, is represented by the formula 1. In formula, R1 represents H, Na, K, Li or Cs, and R2 represents saccharide. The plant sterol is sitosterol, campesterol, stigmasterol, spinasterol, sitostanol or campestanol. The saccharide is glucose, fructose, galactose, glucosamine, or composite thereof. The composite is sucrose, lactose, maltose, starch, dextrin, sorbitol, xylitol, maltodextrin, oligosaccharide or chitosan.
