FIELD: food industry, particularly, production of drink. SUBSTANCE: method of producing drink from kernel of cedar nut includes grinding of shelled kernels of cedar nut in 5-10-fold quantity of water and ageing for 1-2 h at temperature of 40-70 C for extraction of main components. Then formed heterogeneous system is cleaned by filtration and centrifuging from insoluble particles, and cleaned liquid is homogenized, and, as a result, drink is prepared. Prepared drink is emulsion of lipids of cedar nut kernels in aqueous medium containing the following components: fats, 2-10%; proteins, 0.2-1.5%; thiamine, 0.02-0.08 mg.%; tocopherols, 0.05-3.0 mg.%; vitamin F, 5-8 mg. %. EFFECT: production of drink in the form of aqueous emulsion with fat particles in highly dispersed state possessing high aggregative stability. 3 cl |
