<P>PROBLEM TO BE SOLVED: To provide batter mix for deep-fried food for making the deep-fried food sustaining crispiness, fragility by teeth and light palate feeling even after a lapse of time, and to provide the deep-fried food. <P>SOLUTION: The batter mix is obtained by mixing an isothiocyanate or an isothiocyanate derivative, preferably allyl isothiocyanate or an allyl isothiocyanate derivative, and/or an amino acid, preferably a sulfur-containing amino acid with an emulsifier and calcium preparations if necessary. <P>COPYRIGHT: (C)2004,JPO |
