<P>PROBLEM TO BE SOLVED: To provide a method for masking off-flavor of food and drink, a masking agent for the off-flavor of food and drink, and food and drink where off-flavor is masked. <P>SOLUTION: The method for masking off-flavor of food and drink comprises adding a compound represented by formula (1) to food and drink. In formula (1), (n) is 0 or 1, and R is hydrogen atom, a lower alkyl, lower alkoxy, lower alkoxy carbonyl, mono- or dilower alkyl amino, lower alkenyl, lower alkynyl, lower alkanoyl, lower alkanoyloxy, lower alkanoyl amino, cyclo-alkyl, cyclo-alkanoyl, aryl, aryloxy, aralkyl, aralkyloxy, aralkyl amino, aromatic heterocyclic group, heteroaryl alkyl, cycloaliphatic heterocyclic group, carboxy, halogen, or the like. <P>COPYRIGHT: (C)2004,JPO |
