<P>PROBLEM TO BE SOLVED: To provide a method for producing carrageenan improved in viscoelastic characteristics. <P>SOLUTION: The carrageenan improved in viscoelastic characteristics is produced by heating carrageenan at 55-150°C in a gas or an inert solvent. The heat treated carrageenan has properties to reduce endothermal enthalpy and is improved in viscoelastic characteristics, preferably, by heating carrageenan having ≤50% water content preferably at 80-130°C, more preferably at 100-120°C for 1 min-6 hours.
