<P>PROBLEM TO BE SOLVED: To provide a color fading preventing agent for suppressing the color fading of colorants during the preservation of foods, drinks and colorants for food and drink, usable without deteriorating the appearance, taste and flavor of the foods and drinks and having excellent dispersibility and emulsion stability in foods. <P>SOLUTION: This agent contains an extracted tocopherol having d-δ-tocopherol content of ≥45 wt.% in total tocopherol and ferulic acid in the form of an oil emulsion emulsified in water and/or a polyhydric alcohol by using an emulsifier having an HLB of ≥9. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
