<P>PROBLEM TO BE SOLVED: To provide a fried prawn material and a fried prawn in which marine resource can effectively be utilized and nutrient and flavor, etc., of prawn are richer than those of conventional fried prawn material and fried prawn. <P>SOLUTION: The fried prawn material is fried to provide fried prawn and comprises at least either one of prawn shell powder and extract of prawn head. The prawn shell comprises chitin and chitosan materials, calcium content, etc., as an active ingredients and the extract of the prawn head comprises a flavor ingredient characteristic to the prawn. As a result, fried prawn having rich flavor and taste can be obtained and has large usability on nutrition and health. The powder of the prawn shell and the extract of the prawn head are preferably added to coat for the fried prawn material, because full flavor can readily be brought out when fried with oil. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
