<P>PROBLEM TO BE SOLVED: To provide a method for producing soybean curd rich in aromatic and sweet soybean flavor, having smooth palate feeling and just-made deliciousness; to provide a method for producing soybean milk used as raw material for the soybean curd; and to provide a handmade soybean curd set utilizing the soybean milk. <P>SOLUTION: The method for producing the soybean curd comprises adding saccharides having sweetness degree of ≥60% to raw soybean juice and steaming the mixture to cook so as to generate flavor component such as pyrazine or furanone via amino-carbonyl reaction or caramelization to produce the soybean curd having aromatic and sweet flavor and smooth palate feeling. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
