<P>PROBLEM TO BE SOLVED: To provide a starter for tempeh containing, as a main bacterium, filamentous fungus Amylomyces rouxii, and to provide a method for producing tempeh by using the starter. <P>SOLUTION: (1) The starter for tempeh contains, as the main bacterium, filamentous fungus Amylomyces rouxii. (2) The starter for tempeh is obtained by proliferating the filamentous fungus Amylomyces rouxii in cereals or beans. (3) The method for producing tempeh comprises using the starter for tempeh containing, as the main bacterium, filamentous fungus Amylomyces rouxii.
