FAT SOLUTION AND/OR SOLID SOLUTION OF SUGAR-FAT SOLUBLE MATERIAL AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To provide a method for forming a fat solution by dissolving and/or uniformly dispersing a fat-soluble material and forming a solid solution by uniformly dispersing the fat-soluble material in sugar and provide a method for producing a powdery mixture of a fat-soluble material and sugar by using a sugar produced by using a moderately hydrolyzed sugar for producing a dry fat-soluble material.

SOLUTION: A sugar-fat solution is produced by using a prescribed sugar in the production of a fat solution by dissolving and/or uniformly dispersing a fat-soluble material or carrying out partial hydrolysis of a mixture containing a fat-soluble material and starch under specific condition at a low hydrolysis ratio. A sugar-solid solution is produced by using a prescribed sugar in the production of a sugar-solid solution or carrying out partial hydrolysis of a mixture containing a fat-soluble material and starch under specific condition at a high hydrolysis ratio. Also is provided a dried product or powder of sugar-fat soluble material produced by drying the sugar-fat solution.
