<P>PROBLEM TO BE SOLVED: To provide a method for heating food hardly causing breakage in tissues in the inner part of food and facilitating high grade cooking; and to provide a food heater. <P>SOLUTION: The method for heating food comprises the following process: a heating process where food 90 is heated via the heat of condensation generated through exposing the food 90 in an atmosphere containing superheated steam 100 and bringing the surface of the food 90 into contact with the superheated steam 100; and a process of eliminating moisture from the surface of the food 90. The method prevents reduction in moisture content in the inner part of the food 90 when the components of the food 90 are subjected to thermal denaturation. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
