<P>PROBLEM TO BE SOLVED: To obtain a soybean protein material having high lard gel strength and high emulsification strength. <P>SOLUTION: This soybean protein material having high gel strength comprises a protein concentrate having at least about 560.0 g lard gel strength and at least about 65.0 mass% of protein content on a moisture free basis. The concentrate is obtained by adjusting pH to <6.0, removing soluble components from a soybean protein concentrate washed in alcohol, readjusting pH up to over 7.0, subjecting the obtained concentrate to heat treatment, forming a product through arbitrarily subjecting to shearing treatment, and arbitrarily drying the obtained product. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
