<P>PROBLEM TO BE SOLVED: To provide a food material cooling apparatus with which evaporation of water contained in a food material more than necessary is controlled and the food material is transported while being cooled and which is excellent in terms of sanitation. <P>SOLUTION: The apparatus is equipped with food material transport members (endless belts 4 and 5) which have placing parts 4a and 5a placing the food material (rice balls W) and provided with through holes 7 and are movably supported on a horizontal plane, a movement drive means (driving motor M) for moving the food transport members, a cooling chamber 11 formed above the food material transported by the food transport members, an air intake chamber 13 formed below the food material, an air supply means (air blower B1) for supplying cooled air to the cooling chamber, an air suction means (air intake blower B2) for sucking air from the air intake chamber and a superheated steam supply means (superheated steam generator 28) for supplying superheated steam to the cooling chamber. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
