To pack fruit into cartons, the cartons then being stacked on pallets which are loaded into containers for delivery of the fruit to market, trays for the fruit are pre-selected from a defined set of trays to hold selected predefined weight bands of fruit of the crop, the fruit is packed into the pre-selected trays in accordance with the weight band of the fruit, and the packed trays are placed in the cartons so that each and every carton has a packed weight in a predetermined weight range, preferably 11.5 to 13 kg and always less than 14 kg gross laden carton weight per carton, irrespective of the weight band of the fruit placed in the carton.
