PROBLEM TO BE SOLVED: To provide a new oxidation inhibitor having a new and strong oxidation inhibition action, and also capable of preventing the oxidation of unsaturated fatty acid, particularly, polyunsaturated fatty acid.SOLUTION: Provided is an oxidation inhibitor containing an aminocarbonyl compound having a structure where the amino group of a compound having a sphingoid base structure and the carbonyl group of a carbonyl compound are coupled as an effective component. The oxidation inhibitor has high oxidation inhibition capacity, inhibits the oxidation of oil, particularly, oil largely including polyunsaturated fatty acid, and can prevent deterioration caused by the oxidation of oil.SELECTED DRAWING: Figure 1 |
