Ame method and apparatus for injecting steam into buns. The stem injector includes a readily removable platen assembly which assembly defines a plurality of equally spaced steam injection orifices arranged in rows and columns. The platen assembly is specially configured to produce high quality steam. The buns are positioned on a perforated tray, the perforations of which coincide with the steam injection orifices. The steam is injected directly into the buns themselves through the perforations in the tray. |
