摘要 <p>Meat prods. are cured by placing in vapour-permeable envelopes and drying by forced circulation of air at 20-40 degrees C and a speed of 1-5 m/s. The process increases the production rate by =5 times, by reducing the drying period to 6-8 hours, and also stops deformation, souring or mouldiness of the prod.</p>
