Prepn. of dried comminuted leguminous vegetables esp. peas, in which (a) peas of sugar content >=5.5 wt.% are comminuted to pref. >=6.35 mm., (b) particles are cooked with pref. live steam for 10-12 mins., (c) the particles are immediately rapidly cooled to a temp. the eutectic temp. of the pea liquid content, pref. to at least -18 degrees C. in 2 hrs., (d) particles are freeze dried and sieved. Product may be reconstituted with hot water in less than 1 1/2 mins. |
