摘要 <p>Meat is sprayed with soln. pref. 50 - 200 ppm. chlorine, in chilling chamber before the carcass reaches 80 degrees F, then intermittently sprayed (pref. 40 - 110 secs. at 20 - 40 min. intervals) for 6 - 10 hrs. Process prevents shrinkage loss, maintains freshness and bloom and reduces bacterial count.</p>
