<p>General meat slicing machine is of the type which advances meat along a horizontal table until it contacts a vertical stop plate set in a plane spaced adjustably in front of the plane of a slicing blade, both the blade mounting and the stop plate being attached to a carriage which can be moved horizontally to and fro, e.g. by a hydraulic cylinder. To cut slices from the front face of the meat. The blade mounting is moved up and down w. r. t. the carriage as the latter moves to and fro, the mounting being linked to a sliding shoe which moves back and forth on a ramp inclined to the horizontal at e.g. about 15 degrees. Gives mechanized slicing of fresh meat with, or without bones and, pref. after substitution of a rotary cutter for a slicing blade, for slicing delicatessen products such as ham, sausages, etc. Relative movement between blade and support plate during slicing obviates possible tearing of a slice partic. with bone and skin inclusions.</p> |
