<p>Process for the prepn. of must from grapes, possibly for use in wine-making, and of the juices from fruit berries in general, comprises the crushing of the fruits and the removal of the stalks and pips. In the case of grapes the first stage is effected by conventional means and the crushed grapes, after removal of the stalks etc., are sent by the pump to a sulphiting conduit. this is followed by trituration in a disintegrator, of the hammer type. For the fruit berries, other than grapes, the treatment starts at the trituration stage. The triturated fruit then goes by pump to a centrifuge for the sepn. of the solids; these go to a continuous screw press. The centrifuge may be replaced by a filtration unit. The triturated prod. may first be heated in a heat exchanger and then go via the collecting tank and the pump to the centrifuge or filter. When making red wine, the prod. from the hammer mill goes first to the fermentation tank before transfer to the centrifuge. All the various treatment can be effected in a completely mechanical manner without the need of manual operations; the plant is very flexible and can readily be adapted for various types of prod.</p> |
