Block chocolate is transformed into chocolate chips by a planing machine with a bed to which the block is clamped. A cradle which carries the scraping tools is reciprocated relative to the bed by hand or by a mechanical drive. This replaces the time consuming manual scraping by a faster mechanical method. Less scrap which requires reconditioning is produced by the new method.
