PURPOSE:To obtain water-soluble benikoji pigment having improved transparency in high yield, by culturing microorganisms of the genus Monascus in a glycine- containing nutrient medium. CONSTITUTION:Microorganisms, e.g. strains of Monascus anka ATCCC 16360, which belong to the genus Monascus are cultured in a glycine-containing nutrient medium at a pH of 3-9, preferably 6-8, and 20-37 deg.C for 4-10 days aerobically. The glycine content is preferably about 0.25-5g/dl. After the culturing, the bacterium bodies are separated, and the pigment is collected from the culture. Preferably, 30-80% of ethyl alcohol or propylene glycol is added to the culture and the bodies are separated to improve the pigment yield. |
