<p>Injection pickling machine has a set of needles which are pushed into meat so that pickling fluid is injected into the tissues. Each needle is attached to an upper frame and passes down a sleeve or guide. A plastic cap is screwed onto the base of the guide and the opening in the cap and in the guide allow some lateral movement when a flexible needle is being used. The needle has holes in the side to allow the brine out and when not in use with the needles retracted the holes are covered. The cover is mounted in a chamber formed by the cap. This is dimensioned so that lateral movement is possible for the cover, allowing flexible needles to be used.</p> |
