<p>Prepn. of dehydrated meat prod. is claimed which can be preserved for very long periods and then reconstituted by adding back water. The process does not involve the use of chemicals or culinary prepn. Typically, strips of meat, 3mm thick X 2cm X 3cm, are frozen to -35 dec.C. and then warmed gently to drive out moisture. Infra-red radiation is pref. for this. The prod. is then subjected to vacuum pressure and finally centrifuged to ensure a moisture content of below 16%. The dehydrated prod. is pref. sealed in cellophane packages.</p> |
