PURPOSE:To remove yeast flavor and to provide yeast extract with nice beeflike savor, by heat-treating liquid yeast extract having specific solid concentration under a specified heating condition. CONSTITUTION:Liquid yeast extract having 20-70wt% solid concentration is heat- treated at 90-130 deg.C for 1-60min to improve its flavor. For example, the yeast extract is concentrated at normal or reduced pressure, or diluted, if necessary, and adjusted to have 20-70wt% solid concentration. The yeast extract is sealed and heat- treated at 90-130 deg.C for 1-60min under pressure by using an oil bath, an autoclave, plate-type heater, and other heating mediums, to remove the yeast flavor and to provide the yeast extract with beeflike savor. The liquid yeast extract with improved flavor can be made paste, powder, or granules to give a product. |
