摘要 <p>PURPOSE:To prepare powdered high extract liquor capable of standing long- period storage, by blending a liquor having a high content of saccharide and extract with a hydrolyzate of amylopectin having a dextrose equivalent of 1-10, followed by spray drying. CONSTITUTION:Amylopectin or starch consisting essentially of amylopectin is hydrolyzed with alpha-amylase to give a hydrolyzate having a dextrose equivalent of 1-10, which is dehydrated, dried, and blended with high extract liquor, e.g., liqueur, a sweet SAKE, Madeira, etc., and, if necessary, a powdering base, e.g, hydrolyzed dextrin of amylose-containing starch, other water-soluble substance, etc. The blend is subjected to spray drying.</p>
