The present invention relates to a new family of sucrose which is substituted in position 1, 6, 6' by xanthate or thiocarbamate groups. Preferably, the compounds are of the following general formula: <IMAGE> in which: R2, R4, R5, R6, R7, and R8, which are identical or different, correspond to a hydrogen atom or an acyl group; R1 and R3, which are identical or different, correspond to the following groups: <IMAGE> provided that R1 and R3 cannot simultaneously correspond to the groups defined in c or d. Application of these compounds as an acaricide.
