Installation for the automatic splitting of animals for slaughter 3 suspended by two legs 2 from a conveyor 1, comprising a cutting tool, a cutting-tool support 7, 8 and means for vertically moving the cutting-tool support alternately between a top limit position of the start of splitting and a bottom limit position of the end of splitting, characterised in that it comprises: travel-end means 19, 20 suitable for defining the said top limit position; detector means 14 placed on the path of the animal to be split and suitable for detecting the height of the ("undercut") ("chump end") region 16 of junction of the legs 2 with the animal's body; control means 17 actuated by the detector means 14 in order to control the travel-end means so that they define, for the said support 7, 8 upon its subsequent reassent, a top limit position of the start of splitting corresponding to the height of the "undercut" ("chump end"). <IMAGE>
