A water-oil mixture is injected tangentially into an annular rotating chamber 24, 26 fed from a feed chamber 3 of the same axis A. The rotational speed and the axial speed of the liquid are increased in an annular acceleration conduit having frustoconical walls 42. A stable flow of the vortex type is set up in a long cylindrical separation chamber 5. The oil, which is lighter, is taken off axially on exiting this chamber. Application to oil-production platforms, oil refineries and oil tankers. <IMAGE>
