Proces for freeze-concentrating food liquids such as fruit juices, coffee extracts, beer and so forth, in which the substance to be treated is conveyed through a multi-stage freeze concentrator and is conveyed from the freeze concentrator stage with the highest concentration to a module in which the concentration, and thus the viscosity, is increased by crystallization, and a partial separation of mother liquor is obtained by means of a centrifuge.
