A process for preparing beef stew packed with tray comprises: (a) boiling beef in the water, separating beef stock, and cutting the size of peas; (b) cutting potato, carrot, onion and mushroom the size of peas, and branching in 100 deg.C water for 5 min; (c) mixing kechap with roasted wheat flour, adding the beef stock, salt and pepper powder, and mixing with the above branched vegetable and cut beef to obtain the sauce; (d) filling the sauce and peas into the container (PP-EVOH-CPP), e.g. tray.; (e) replacing the O2 gas of container with N2 gas or CO2 gas; (f) heat-sealing, and sterilizing under 1.1 kg/cm2 for 5 min. and 1.5 kg/cm2 for 20-25 min.; (g) cooling it. The obtd. food can be well preserved for a long time at room temp. and has a good taste. |
