<p>A film is used to control the meltability under handling of a full or partial coating made of chocolate, a chocolate substitute, a fatty topping or a similar coating on a crumbly product such as a biscuit, pastry, cereal bar, food or confectionery, e.g. a meringue or the like. A film-forming composition is also provided for producing said film and includes 40-95 wt % of an aqueous solvent, 1-50 wt % of at least one film-forming agent, and 0.2-20 wt % of at least one emulsifying agent.</p> |
