In this plant, the processed cheese and any of its ingredients are transferred from a preheating chamber (4) to an expansion and cooling chamber (11) through a sterilising head (7) in which the cheese is sterilised at high pressure by injection of steam. The pressure required for maintaining the temperature in the holding tube (26) is provided by the difference in capacity between an upstream transfer pump (5) and a downstream transfer pump (9). This difference is controlled by controlling the speed of rotation of the downstream pump (9) by means of a pressure sensor and electronic regulation means. <IMAGE>
