A fructose dianhydride having metal cation complexing properties is prepared by prior acetal formation on a fructopyranose, to form a cyclic acetal on positions 4 and 5 of the fructopyranose molecule, followed by reciprocal double transacetalation on the anomeric position of the acetal by the action of hydrogen fluoride in an anhydrous medium. This gives a di-acetal di-fructopyranose 1,2':2,1'-dianhydride which is hydrolysed to give the di- beta -D- and/or di- alpha -L-, and/or beta -D, alpha -L-fructopyranose 1,2':2,1'-dianhydride.
