PROBLEM TO BE SOLVED: To provide a profitable and balanced process for continuously producing L-aspartic acid from fumaric acid as a raw material. SOLUTION: This method for producing L-aspartic acid comprises (1) a process for obtaining an aqueous solution containing L-aspartic acid ammonium salt from fumaric acid and ammonia as starting raw materials by an enzymatic reaction, (2) a process for adding fumaric acid to the solution obtained in the process (1) to deposit the L-aspartic acid, and (3) a process for recovering the L-aspartic acid crystals obtained in the process (2) and recycling the mother liquor into the process (1). Therein, the fumaric acid as the raw material is supplied to the reaction system in the process (2) and to the reaction system at least in the process (1) or the process (3), and the fumaric acid added to the reaction system in the process (2) is added in a molar ratio of 0.1-0.85 to the L-aspartic ammonium salt existing in the process (2). |
