PROBLEM TO BE SOLVED: To obtain a medium capable of raising the production of amylase which is useful for medicines, fermented foods and biochemical reagents, etc., by specifying the respective contents of carbon and nitrogen each available for amylase-productive bacteria in the medium comprising wheat bran, carbohydrates and vegetable proteins. SOLUTION: This medium, which comprises wheat bran, carbohydrates (e.g. grain flour) and vegetable proteins (e.g. wheat protein), is set at 2.9-3.6 in the weight ratio of carbon/nitrogen each available for amylase-productive bacteria in this medium and at >=8.7wt.% in the carbon content. This medium is useful for culture of Aspergillus oryzae IFO 30113 or Rhizopus delemar IFO 4801. |
