Procedure for the preparation of capsules and encapsulation of substances. It is a new type of capsule which is formed in the interaction between cationic polymers and anionic amphiphilic molecules. The invention consists in dripping a solution of chitosan (cationic polysaccharide polymer of natural origin) onto a solution of an anionic amphiphilic compound at determined concentrations, with the instantaneous formation, within the solution of the amphiphilic compound, of spherical capsules of the size of the drop, which are made up of a water-insoluble membrane and the interior of which contains the polymeric solution. These capsules permit the two-way diffusion of substances which have previously been dissolved either in the solution of the amphiphilic compound or in that of the polymer. The most important applications thereof are in the pharmaceutical, chemical, food and textile fields.
