A method for stabilizing polyphenolic materials, especially procyanidolic oligomers, so as to prevent their oxidation and/or polymerization whilst protecting their antiradical activity, is new. Polyphenolic materials, especially procyanidolic oligomers, are stabilized to prevent their oxidation and/or polymerization, whilst protecting their antiradical activity, by a process in which they are dissolved or dispersed in an inert organic solvent and to this is added a hydroxy alkyl cellulose (alkyl has 1-8C), mixed to homogeneity, and evaporated in an inert gas atmosphere to give a powder.
