PROBLEM TO BE SOLVED: To provide a quantitative analyzing method of histamine capable of determining the quantity of histamine in high accuracy from a sample including a mixture of histamine and other amines, usable for a wide field such as food industry, fisheries industry, food sanitation, medical care and analytical instruments, or the like, and a quantitative analyzing reagent used therefor. SOLUTION: This method qualitatively determines the quantity of histamine in a sample including histamine by acting a histamine dehydrogenase, preferably a histamine dehydrogenase specifically acting on the histamine, more preferably a histamine dehydrogenase acting of the histamine but not acting on cadaverine and putrescine on the sample including the histamine and measuring the product. This invention includes a reagent for the quantitative analysis of histamine.
