PROBLEM TO BE SOLVED: To provide the subject method and apparatus enabling the reliable production of sausages, easy to handle, in particular enabling sausage sheathes to be easily penetratedly attached to sausages, while being cleanable easily. SOLUTION: This apparatus has such a scheme that a part of an injection pipe 8 is surrounded by a sausage sheath 10, a pres element 12 is disposed in close proximity to the contracted portion of the sheath 10 and intended to press the sheath 10 toward the outer periphery of the cylinder-shaped injection pipe 8 and ensures, in operation, a torque to be transmitted to the sheath 10 by the injection pipe 8; the injection pipe 8 has a plurality of openings 14 on the wall of its end region, and a mass of pressurized sausage meat flows with radial flow component through the openings 14 and is allowed to flow quickly into the sheath 10.
