WATER IN OIL(W/O) TYPE EMULSION CONTAINING MULBERRY LEAF AND METHOD FOR PREPARING THE SAME

PURPOSE: Provided are a water in oil(W/O) type emulsion containing mulberry leaves and its preparing method. The W/O type emulsion contains active ingredients of mulberry leaves to prevent various adult diseases and has improved flavor suitable for the manufacture if butter and margarine. CONSTITUTION: The W/O type emulsion contains oil and fat, emulsifier, refined salts, purified water and citric acid. Particularly it is characterized by comprising 0.1-1.0 wt.% of fine powders of mulberry leaves, 0.5-20.0 wt.% of mulberry extract(solid content of 10%), their mixture.
