PURPOSE: A process of preparing a Scutellariae radix extract exhibiting an excellent antibacterial effect as an antibacterial agent capable of selectively inhibiting the growth of pathogenic Gram negative bacteria is provided. Whereby, the composition containing the extract can be effectively used as a selective functional antibacterial additive for food or animal feed. CONSTITUTION: Scutellariae radix is heated in water at 100 to 120deg.C for 2 to 3 hr or lower alcohol such as 75% methanol, filtered, concentrated and then freeze-dried at -80deg.C. A pharmaceutical composition contains the Scutellariae radix extract and/or a pharmaceutically acceptable salt. For an example, a syrup formulation of the Scutellariae radix extract contains 2g Scutellariae radix extract HCl, 0.8g saccharine, 25.4g saccharide, 8.0g glycerine, 0.04g flavoring agent, 4.0g ethanol, 0.4g sorbic acid and a stoichiometric amount of water.
