The knife consists of a handle (3) and flexible blade (5) made in one piece from a plastic reinforced with glass fibres and having a modulus of elasticity in tension of the order of 5000 - 6000 MPa. The blade is thickest at the point where it joins the handle and reduces in thickness towards its working edge (A), at least as far as a flexure zone (D), while its edges (5a) are in the shape of elliptical arcs.
