PURPOSE: Provided is a manufacturing process of a hamburger patty using duck-meat, therefore everyone can take the ham regardless places. CONSTITUTION: The manufacturing process of ham using duck meat comprises the steps of: selecting and thawing high quality of frozen duck meat to its surface temperature being 10 deg.C or less; finely cutting the thawed duck meat into a certain size; mixing the cut pieces of the duck meat with other ingredients in a proper mixing ratio; forming the mixture with maintaining the mixture to -2 to -3 deg.C and coating it with coating ingredients; deep-frying it at 175±2 deg.c for 35±1 seconds and quick-freezing it at -35±2 deg.C for 45±2 minutes. |
