PROBLEM TO BE SOLVED: To provide a method for producing a powder regular coffee having a rich content of flagrance components by preventing the volatilization of the flagrance components when grinding the roasted coffee. SOLUTION: This method for producing the powder regular coffee comprises a grinding step for grinding the roasted coffee beans by inserting the roasted coffee beans and water into a mill, and a drying step for drying the resultant pasty dispersion to provide the objective powder regular coffee. Preferably, the drying step comprises a diluting step for diluting the pasty dispersion by adding the water thereto to provide a dispersion, and a spray-drying step for spray-drying the resultant dispersion, or the drying step comprises a foaming step for foaming the pasty dispersion by a whisk to provide a foam-shaped dispersion, a freezing and pulverizing step for freezing the resultant foam-shaped dispersion, and pulverizing the frozen dispersion to provide frozen granules, and a vacuum-drying step for vacuum-drying the frozen granules.
