PURPOSE: A process of preparing a buckwheat composition for the manufacture of buckwheat food products by adding a radish component which improves the digestion of buckwheat and fulfills a seasoning function is provided. Whereby, the composition reduces the amount of MSG to be used and allows a user to conveniently use without kneading. CONSTITUTION: Buckwheat is removed from buckwheat chaff, ground and mixed with 5 to 70% by weight of radish juice or radish powder, based on the total weight of the buckwheat composition to produce a buckwheat composition. It is manufactured by the steps of: preparing buckwheat flour; preparing radish juice; mixing the buckwheat flour and 5-70 volume % of the radish juice to prepare dough; and vacuum packing the dough.
