PURPOSE: Provided is a method for preparing ready-to-eat meal containing ginseng by natural fermentation method to maintain the flavor of ginseng without destroying components of ginseng. CONSTITUTION: A method for preparing ready-to-eat meal containing ginseng comprises the steps of: washing raw ginseng, followed by dewatering and dipping in an alcohol solution; cutting the ginseng, followed by addition of 150-250 parts by weight of an alcohol solution and 20-50 parts by weight of sugar to 100 parts by weight of the cut pieces of ginseng and fermenting them after vacuum sealing; filtering the fermented extract thereof and maturing the filtrate under the vacuum condition; and mixing 450-550 parts by weight of sugar, 450-550 parts by weight of sugar syrup and 2200-2600 parts by weight of water to 100 parts by weight of remnant of the filtration, followed by milling and addition of grain.
