PURPOSE: A method of making a health supplementary food by extracting dried yeast containing selenium in a solvent and then mixing with an emulsifier and preservatives is provided. By the method, selenium is obtained from yeast containing selenium in large quantities at low costs. The health supplementary food containing selenium is used in prevention and treatment of selenium deficiency disease. CONSTITUTION: Dried yeast containing selenium is extracted in a solvent at 20 to 100deg.C for 10 to 6,000min. Then, 1L yeast extract is mixed with 1 to 100g emulsifier and 1,000g preservatives and agitated for 0.5 to 10hr to give a health supplementary food. The emulsifier is one or more selected from glycerin fatty acid esters, sorbitan fatty acid esters, organic acid monoglyceride, polyglycerin fatty acid, stearyl lactic sodium lactate, polysorbate or lecithin. The preservatives are any one of benzoic acid or sodium benzoate, dehydroacetic acid, sorbic acid, paraoxybenzoic acid esters, sodium propionate or its calcium salt. The solvent is one or two or more selected from water, ethanol or hexane. The health supplementary food is diluted in water or drinks in a ratio of 10 to 1,000 times.
